Easy Baklava

INGREDIENTS
INSTRUCTIONS
Step 1. Overlap 4 filo pastry sheets, cut into 8 cm square, press into mini muffins tray and bake for 10 minutes at 180° or until crispy.
Step 2. Toast and finely chop mixed nuts. Set aside.
Step 3. Gently warm lemon juice, water, sugar, honey and cinnamon on low heat. Stir until mixture has thickened.
Step 4. Incorporate chopped walnuts to sugar syrup and stir in lemon zest.
Step 5. Fill filo shells with nut mixture (keep left over syrup) and arrange on baking sheet. Bake for 10 minutes in 180°oven.
Step 6. Take filo cups out of the oven and spoon leftover syrup over nut mixture.

- 2 tbsp lemon juice
