Dukka Crusted Salmon

● Salmon fillet 4 x 200 gr
● Olive oil
● For the dukkah
● Hazelnuts 50 gr
● Almonds 50 gr
● Pistachio 50 gr
● Fennel seeds 1 tsp
● Sesame seeds 1 tsp
● Ground cumin 1 tsp
● Ground coriander 1 tsp
● Salt/Pepper

Step 1. Preheat oven at 200°, toast all the nuts, sesame seeds and
fennel seeds for a few minutes until golden brown. Transfer to a mortar
and crush until a course mixture is obtained.
Step 2. Rub the salmon gently with olive oil, sprinkle the dukkah and
lightly press to help it stick.
Step 3. Bake for 10-15 minutes or until it’s cooked to your liking.
Step 4. Serve with rice and greens of your choice with a lemon wedge.
