Corn Fritters

250g corn
1 red capsicum
½ bunch of coriander
1 tsp red curry paste
150g self-raising flour
4 eggs
200g smoked salmon
150g cottage cheese
1 lime
½ bunch of dill

  1. Dice red capsicum in small pieces, stain corn and combine. Into the mix add red curry paste, eggs, self-raising flour and chopped coriander.
  2. Heat fry pan and spray with cooking oil. Use a ladle to pour mixture into the pan, three fritters per batch.
  3. Cook each fritter up to 2 minutes on each side. Transfer to a plate.
  4. Meanwhile, mix cottage cheese, chopped dill, rind and juice of a lime in a bowl. Add pepper to taste.
  5. 5.Serve corn fritters with slices of smoked salmon and cottage cheese dressing.
