Christmas baked salmon
Christmas baked salmon with maple syrup, pomegranate feta & mango

● Salmon fillet 1 kilo kg
● Dill 1 bunch
● Silvered toasted almonds 100 gr
● Pomegranate 2 units
● Feta 200 gr
● Limes 2
● Maple syrup 100 ml
● Capers 2 tbsp
● Mango (diced) 1 unit
● Diced spanish onion 1
● Olive oil 1 tbsp
Method:
Step 1. Place the salmon fillet in a baking tray and add the Maple syrup.
Step 2. Bake at 180 degrees for 15 minutes.
Step 3. Scoop the sauce onto fish from time to time.
Step 4. Mix the toasted almonds, pomegranate, capers, mango, spanish onion, feta, lime juice and
rind, chopped dill, and a drizzle of olive oil.
Step 5. Serve the Salmon topped with the salsa
