Beef and halloumi burgers

Ingredients
200g haloumi
500g beef mince
1 parsnip
1 purple sweet potato
1 bunch baby carrots
2 Desiree potatoes
4 burger buns
1 onion
1 fresh rosemary sprig
4 garlic cloves
200g cooked and peeled beetroot
20g toasted pine nuts
20g grated parmesan
1 bunch basil leaves

200g cooked and peeled beetroot
20g toasted pine nuts
20g grated parmesan
1 bunch basil leaves
Method
- Preheat oven to 200°C.
- Peel baby carrots, parsnip & sweet potato. Cut vegetables in wedges. Place in a baking tray with garlic, fresh rosemary and olive oil. Roast for 25 to 30 minutes or until golden.
- Meanwhile, finely dice onion. Add olive oil to a hot pan and cook onions until caramelised. Allow to cool.
- Combine beef mince, onion, salt and pepper. Mix well and portion into 4 patties.
- Blend beetroot, toasted pine nuts and parmesan together. Add salt and pepper to taste.
- Heat grill pan on medium to high. Spray pan with cooking oil, place patties and cook for 3 minutes each side.
- Grill halloumi and cook for 2 minutes each side, just before serving.
- Place your roast root vegetables on a plate, build the burger with a generous spoon of beetroot pesto, cooked burger patty and a slice of grilled halloumi.
