Winter Warmer recipes to try at home

Try these comfort food recipes at home, demonstrated in-centre by a professional chef for our Winter Warmers event.

Grilled chicken, creamy chickeas and vegetable curry

 

 

INGREDIENTS

 

  • 1 tsp vegetable oil
  • 1 chicken breast butterflied
  • 2 tbsp curry paste
  • 1 cup vegetable stock
  • 400ml can coconut cream
  • 1 red capsicum diced
  • 1 Spanish onion diced
  • 500 g pumpkin , cut into 2cm pieces
  • 1/2 cauliflower, trimmed, cut into florets
  • 3 tomatoes, roughly chopped
  • 300g green beans, trimmed, halved
  • 400g can Chickpeas, drained, rinsed

 

INSTRUCTIONS

 

1.  Roast diced pumpkins and cauliflower florets at 200°c for 20 minutes or until slightly colored.

2. Meanwhile heat oil in a medium saucepan over medium to high heat. Sear chicken 4 minutes on each side, leave in a covered bowl to rest. Add curry paste. Cook, stirring, for 30 seconds, add stock and bring to a simmer. Add coconut cream.

3. Add roasted vegetables, capsicum, beans and chickpeas, cook for 10 minutes till all vegetables are cooked through. Add chopped coriander off the heat.

4. Serve the chicken with the vegetable curry. (You can also serve with yoghurt and naan bread)



Pear, prosciutto, goats cheese, rocket and walnut toasties

 

 

INGREDIENTS

 

  • Rocket 1 cup
  • Turkish bread / ciabatta 1 loaf
  • 2 pears sliced
  • 50gr chopped walnuts
  • 100gr goat cheese
  • Honey 1 tsp
  • Seeded mustard 2 tsp
  • Mayonnaise 4 tbsp
  • Prosciutto 6 slices

 

INSTRUCTIONS

 

1. Stir together the mayonnaise, mustard and honey.

2. Slice the bread lengthwise in half. Layer the goats cheese over the bottom half. Meanwhile, spread the top half with the sauce.

3. Top the bottom half with the prosciutto, sliced pears, rocket and chopped walnuts, then close the sandwiches.

4. Place in the hot sandwich press till bread is toasted and crispy. Cut them in half and serve right away.

 

 

Almond and orange cake

 

 

INGREDIENTS

 

  • 250g almond meal
  • 250g sugar
  • 2 oranges
  • 6 eggs
  • Bicarbonate soda ½ tsp

 

INSTRUCTIONS

 

1. Boil the oranges 3 times starting with cold water each time, then blend.

2. Mix sugar, eggs and almond meal together, then add the orange purée, mix well.

3. Place into a greased tray with baking paper. Bake at 160°c for around 40 minutes or till set.

4. Serve with ice cream or warm chocolate sauce
