Passionfruit vodka spritzer

Makes 6 spritzes
Passionfruit vodka syrup can be stored in the freezer for up to 6 months. 


Ingredients:

½ cup (125ml) water 
¾ cup (165g) caster sugar 
1 cup (250ml) passionfruit pulp (approx. 8 passionfuit) 
250ml vodka 
Sparkling or soda water and ice, to serve 
Lime slices and mint leaves, to garnish 


Method:

1. Place water and sugar in a saucepan. Bring to the boil and cook for 5 minutes.
2. Remove from heat stir through passionfruit pulp and allow to cool. 
3. Combine passionfruit syrup and vodka in a large jug and refrigerate until cold before using. 
4. Serve vodka mixture over ice in a high-ball or old fashioned glass and top with sparking or soda water to taste. Garnish with lime slices and mint leaves.
