Chicken souvlaki skewers with tzatziki


60ml (1/4 cup) olive oil
1 lemon, ½ juiced, ½ to serve
3 cloves garlic, crushed
3 teaspoons dried oregano, crushed with fingers
1 teaspoon each of salt and freshly cracked black pepper
6 chicken thigh fillets, cut into 3cm cubes
4 x wooden or metal skewers
4 x Greek Pita bread, warmed or char gilled
Salad leaves, to serve

200g Greek style yogurt
½ Lebanese cucumber, seeded and grated
1 clove garlic, crushed
¼ teaspoon dried mint
juice of ½ lemon or to taste
½ lemon juiced


1. For marinade, place olive oil, lemon juice, garlic, oregano, salt and pepper in a large bowl and whisk to combine. Add chicken cubes to marinade and combine well. Thread chicken onto skewers, place on a
plate and drizzle with any leftover marinade. Cover with plastic wrap and refrigerate for 30 minutes or overnight to allow flavours to develop.

2. Meanwhile to make tzatziki, combine yogurt, cucumber, garlic, mint and lemon juice in a bowl. Season with salt and pepper and refrigerate until required.

3. Heat a large frying pan or char grill over medium-high heat. Add chicken skewers and cook for 3 minutes each side or until cooked through. Squeeze remaining lemon over and serve with tzatziki, warmed Greek Pita bread and salad leaves.
